Lemon & Asparagus Pasta Salad

Backyard cookout season is here and let's be honest, heavy, greasy foods are always on the menu! Why not lighten things up a bit this summer with a fresh, zesty pasta salad that offers you tons of fiber and loads of flavor and that leaves you feeling your best? Introducing my new Lemon and Asparagus Pasta Salad that will be sure to please a crowd and pair with any other dishes on the menu perfectly!
Ingredients:
1 box of GF fusilli (Jovial)
3 cups of chopped asparagus
1 diced red bell pepper
4 tbsp of avocado oil
4 tbsp of lemon juice
the zest of two lemons
1/4 tsp of salt
1/4 tsp of ground pepper
1 tsp of garlic powder
Directions:
Prepare your pasta according to box directions and then drain it and set it aside to cool. Add the zest of both lemons over your pasta and then proceed to cut both lemons in half. Squeeze and add the lemon juice to your pasta. Add in your asparagus, red pepper, avocado oil, salt, pepper and garlic powder. Give it a toss and place it in the fridge to cool for a minimum of one hour. Enjoy!
