Cauliflower Fried Rice

As if fried rice could actually ever be waist line friendly right? Well spoiler alert, it can be! I set out to make my very own, healthy version of this yummy Asian dish! This version is grain free, nutritious and light but not in any way lacking in flavor! Try it out!
Ingredients:
12 ounces of riced cauliflower
⅓ cup of chopped green onions
¾ cup of frozen peas and carrots (thawed)
3 eggs (scrambled)
2 tbsp of pure sesame oil
2 tbsp of coconut aminos
1 tbsp of minced garlic
¼ tsp of black pepper

Directions:
In a medium skillet or wok, add in the sesame oil and minced garlic and saute for 2-3 minutes. Then, add the riced cauliflower, onions, peas, carrots and scrambled eggs all together and stir well. Drizzle the coconut aminos on top and stir until it is evenly distributed throughout. Lastly, top the dish with the black pepper and enjoy!
