Salmon Fried Rice



Who doesn't love a heart healthy, one wok meal that is loaded with protein, healthy fats and veggies? This simple, salmon fried rice recipe is sure to satiate and energize you and it makes for the perfect lunch or dinner any day of the week! Personally, I love to whip up a big batch on the weekends and freeze individual portions for healthy lunches to enjoy in the week ahead! Go ahead and give this LHWL Asian inspired dish a try my friends and be sure to let me know what you think!


Ingredients:


  • 3 salmon fillets 

  • 4 cups of cooked organic jasmine rice (2 bags steamed)

  • 2 cups of peas and carrots 

  • 1 cup of scallions 

  • 2 eggs scrambled 

  • 1 tbsp of coconut aminos 

  • 1 tbsp of garlic powder

  • 1/2 tbsp of salt

  • 1/4 tsp of paprika 

  • 4 tbsp of avocado oil 


Directions:


Add your avocado oil to your wok or skillet and then toss in your salmon fillets and proceed to cook and mince them thoroughly at medium to high heat. Then, set your salmon aside and scramble your eggs and then proceed to steam your rice in the microwave according to it's directions. As you are steaming your rice, simultaneously chop your veggies and then sauté them in the garlic, salt, paprika and coconut aminos. To finish it off, toss back in the salmon, rice and eggs and give it a quick stir and then allow it to simmer on low heat for a remaining five minutes. Then...enjoy!
