My recent trip to Hawaii influenced this delicious, tropical and fresh meal and I couldn't be more excited to share it with you guys! This dish is loaded with spicy shrimp and beautiful, colorful produce served over white rice! I just know you will love it!
10 medium sized of shrimp (pre peeled)
4 tbsp of avocado oil
1/4 tsp of chili powder
1/4 tsp of salt
2 garlic cloves (chopped)
2 cups of Basmati rice (I love the steamable bags by the organic brand Seeds Of Change)
1 cup of diced cucumber
1 cup of purple cabbage
2 cups of diced pineapple
one medium size bowl
Directions:
In a medium skillet, toss in your shrimp and coat it in your avocado oil, chili powder, salt and garlic and then sauté at medium/high heat. Simultaneously, steam your rice and coat the bottom of your bowl. Next, get to chopping up your purple cabbage, cucumber and pineapple. Then, begin plating your dish by adding in your shrimp, cabbage, pineapple and cucumber, All that's left is to dig in and enjoy!
