Goat Cheese, Pear & Arugula Salad

Tis the season for bloat, inflammation and constant sniffles...right? Wrong! Now sure, it's no secret that sugary treats are highly praised and indulged in around the holidays and most don't feel their best come January. But what if we stopped neglecting our nutrition for the sake of the holidays and we made healthy fit the theme instead? That's what I strive to do each holiday season, and I hope you will join me as well by tossing together this red and green, vitamin packed salad that will be as eye catching on your Christmas dinner table as it will enhance your health!
Ingredients:
Salad:
2 cups of organic arugula
1/4 cup of pumpkin seeds
1/4 cup pomegranate seeds
1/4 cup of goat cheese
1/2 pear (finely sliced)
Dressing:
1/2 cup of organic pomegranate juice
1/4 cup of white wine vinegar
1 tbsp of organic maple syrup
Directions:
In a medium bowl, add in your salad fixings, give it a toss and set it to the side. Then, in a small bowl or salad dressing shaker, mix together your pomegranate juice, white wine vinegar and maple syrup. Evenly drizzle your dressing on your salad, give it another toss and enjoy!
(Save extra dressing in fridge for up to 2 weeks)
