Tuscan White Bean And Kale Soup

When snow is on the way, healthy comfort food like this creamy, veggie loaded white bean soup is a go to! Whip it up in minutes and allow it to simmer slowly as your house is filled with a delicious aroma of herbs and spices that are sure to warm you from the inside out!


Ingredients:


  • 1 32 oz carton of low sodium organic vegetable broth 

  • 2 cups of cannellini beans (not drained)

  • 2 cups of water 

  • 2 cups of organic fresh chopped kale 

  • 1 cup of diced carrots 

  • 1 cup of chopped celery

  • 2 tbsp of avocado oil

  • 1 bulb of garlic (chopped and peeled- yes the whole thing!)

  • 1/2 tbsp of salt 

  • 1/2 tsp of pepper 

  • 1 tsp of ground cumin  

  • A handheld emulsion blender   



Directions: 


Add your beans, vegetable stock, garlic cloves and water to a pot and bring to a boil and then allow it to simmer for 10 minutes. Then puree your beans, vegetable stock and garlic with a hand held emulsion blender. Next, add in your kale, celery and carrots and additional spices and give it a stir. Lastly,  let your soup cook on medium heat for 20 minutes and then enjoy!
