Blueberry Chicken Salad



Chicken salad wraps with a fruity kick? Sign me up! This easy, make ahead lunch or dinner recipe is the perfect way to get in your protein, veggies and fruit all at once and it requires only a minute or two to assemble! Whip up a batch on the weekends and set yourself up to eat clean even on the busiest of weeks!



Ingredients:

  • 1/2 cup of blueberries

  • 1/2 cup of diced cucumber

  • 1/4 cup or diced white onion

  • 1/2 cup of organic mayo

  • 1/4 cup of slivered almonds

  • 1/4 tsp of salt and pepper

  • 2 chicken breasts diced

  • organic romaine lettuce

Directions:


Boil or bake your chicken breasts and then set them aside to cool. Then, once they have cooled, finely dice the chicken breasts and then add them to a medium bowl. Then, toss in the mayo, diced cucumber, blueberries, almonds, salt and pepper and mix well. Wash your lettuce leaves and then carefully and evenly assemble two to three scoops onto each leaf, wrap it up and ENJOY!


Note: Put the remaining chicken salad in a keeper in a fridge for later.
