This delicious stir fry is one of my favorites ten minute meals that includes all the healthy goods: protein, fat, carbs, veggies and loads of flavor! Prep your rice ahead of time in your Instapot like I do and then grab your wok and go to town! It's a favorite on my dinner circular and I think it will become one of yours as well!
Ingredients:
4 cups of cooked brown rice (about 1 ½ cup dried)
16 ounces or four small fillets of wild Alaskin salmon (skin off)
4 tbsp of EVOO (extra virgin olive oil)
4 cup of broccoli
2 tsp of curry powder
2 tsp of pink Himalyan salt
1 tsp of garlic powder
1 tsp of dried basil
Directions:
Spray a medium sized skillet with non-stick spray and then turn the heat on your stove top to medium. Then, add in the salmon and cook thoroughly and then dice it up in the pan into bite size pieces. Then, toss in the broccoli, rice and seasonings and saute it all together. Serve the stir fry immediately fresh off the stove and then enjoy!
*This recipe makes four servings.
