I really should have been born Italian you guys. I love, love, loveee pasta! Like, I could really eat it every day. Okay, I might actually be obsessed. I like to change it up a bit though and also add a healthy twist to some classic pasta dishes. I have always been a huge fan of pesto! I also really just can't get enough of basil in general (hence, why I cook with it all the time) and broccoli is my favorite veggie so I said "hey, why not mix the two?" So, I did... and it was heaven! Now, though I don't claim to be a vegan I do typically avoid dairy most of the time but for this recipe it just called for a little parmesan cheese. Life is about balance right? I hope all you other pasta fanatics try this out and enjoy it as much as I do! Bon Appetit friends!
1 cup of steamed of steamed broccoli
1/2 ounce of fresh basil
2 cloves of garlic
3 tbsp. of extra virgin olive oil (EVOO)
4 oz. of shredded parmesan cheese (optional if you prefer vegan style)
12 oz. of gluten free farfalle
Boil the pasta according to the box's directions. Then, in a food processor add in the basil, garlic, steamed broccoli, olive oil and parmesan cheese (optional). Then, finely chop. Drain the pasta and then thoroughly mix in the pesto and then you're all done! ENJOY!
