Cinnamon Raisin Muffins



Comforting and warm, cinnamon spiced muffins with sweet raisins that smell up the whole house make for the perfect breakfast or snack any time of the day. These muffins can be easily made in bulk and eaten on the spot or even frozen for later. Enjoy!


Ingredients:


  • 2 cups of quick oats

  • ⅓ cup of almond flour

  • ½ cup of raisins

  • 3 eggs

  • 4 tbsp of Kerrygold butter (melted)

  • ½ cup of coconut sugar

  • ½ cup of maple syrup

  • 1 tsp of cinnamon

  • ½ tsp of baking powder


Directions:

Preheat your oven to 350 degrees. Line a muffin tin with twelve paper baking cups. Then, in a medium bowl add in the oats, almond flour, raisins, coconut sugar, cinnamon and baking powder and mix well. Then, add in the eggs, melted butter and syrup and mix thoroughly. Lastly, divide the mixture evenly amongst the muffin tins and bake at 350 degrees for 20 minutes. Then, allow the muffins to cool and then serve immediately or store in the freezer for later. Enjoy!
