Dessert... I never miss it and I always have it on hand at home! I always strive to make the healthiest versions of whatever I'm craving and these cookies are no different! Give me some chocolate and give me some coconut and I'm a happy girl! I've always been an Almond Joy fan and I love my chocolate chip cookies so why not combine the two? I really can't even put into words how amazing these cookies are. They taste like a slice of heaven and my little ones love them too! I'm actually snacking on one as I type this ;-)! Do yourself a favor and try'em out!
1 cup of almond flour
1 cup of shredded unsweetened coconut
1 tsp of vanilla extract
1/2 cup of coconut sugar
1/4 tsp of salt
1/3 cup of melted coconut oil
1/2 tsp of baking powder
1/2 cup of Enjoy Life chocolate chips
Pre heat your oven to 350 degrees. Then, in a medium bowl combine the above ingredients leaving the chocolate chips for last. Then, slowly fold in the chocolate chips. Lastly, with a two inch cookie or ice cream scooper portion out the cookie dough onto a greased baking sheet or Pyrex dish. Bake the cookies for 15-20 minutes or until slightly golden brown. This recipe makes 12 cookies. ENJOY!
