Coconut Milk Yogurt & Blueberry Parfait



How fun and pretty is this layered breakfast that can be assembled in as little as five minutes? Breakfast doesn't have to be complicated and time consuming! Who really has time for a long, strung out breakfast routine anyways? Not this momma! Today I am sharing with you all my go to parfait that I am positive you and your family will love! The granola is best made a ahead of time the weekend or night before but then you're all set to layer your parfait in the morning and chow down! ENJOY!


Parfait Ingredients:

  • 1/3 cup of Granola (see recipe down below)

  • 8 oz. of unsweetened plain or vanilla yogurt (So Delicious is my go to brand)

  • 1/3 cup of freshly washed, organic blueberries

  • A drizzle of honey


Granola Ingredients: (I recommend making a big batch to have more for later):

  • 2 cups of quick oats

  • 3/4 cup of melted or liquid coconut oil

  • 3/4 cup of honey

  • 2 tbsp. of cinnamon


Directions:


Pre heat your oven to 350 degrees. In a medium bow, combine the quick oats, melted or liquid coconut oil, honey and cinnamon. Then, using a spatula, evenly spread the mixture out on a baking sheet and place it in the over for 20 minutes or until golden brown and then set aside to cool. Once the granola has cooled, use the spatula to break it apart into small chunks. Set aside the appropriate amount for your parfait and then store the rest in a zip lock back in a cool, dry place. Then, in a small trifle glass start assembling your parfait. Start with a layer of yogurt, then a layer of blueberries, then a layer granola and them repeat till you reach the top of your glass. For an extra sweet kick, add a drizzle of honey and then dig in! ENJOY!
