Cranberry & Walnut Tuna Salad

Who would have thought a tiny can of tuna could transform into this beautiful, delicious meal in minutes? This salad is loaded with protein, crunch, fiber and healthy fats. It makes for the perfect quick lunch or dinner and it can be made in a single batch or in bulk to have available throughout the week! Try it out!



Ingredients:

  • 4 packets or cans of tuna (in water)

  • 6 tbsp of real mayonnaise

  • 2 tsp of curry powder

  • 2/3 cup of dried cranberries

  • 2/3 cup of diced celery

  • 8 cups of field greens


Directions:

Simply toss all of the ingredients in a bowl in no specific order and mix well. Serve immediately over field greens or store for up to three days. Enjoy!
