Crunchy Peanut Butter Cookies

The way to this girl's heart will always be chocolate. However, the runner up would for sure be anything peanut butter! These cookies are crunchy, sweet and satisfying and are the perfect healthy treat for all of the peanut butter lovers out there! Try it out!


  • 2 cups of almond flour

  • ⅓ cup of rice flour

  • ½ cup of coconut sugar

  • ¼ cup of honey

  • 1 tsp of baking powder

  • ½ cup of melted coconut oil

  • ½ cup of chopped peanuts

  • ½ cup of softened peanut butter

  • 2 eggs


Preheat your oven to 350 degrees. Then, in a medium bowl combine the almond flour, rice flour, coconut sugar, baking powder and chopped peanuts. Then, soften the peanut butter and coconut oil in the microwave for 30 seconds each and add it in along with the honey and eggs and mix well. Then, using a 2 tbsp cookie scoop, portion out your cookie dough and place it on a baking sheet sprayed with non-stick spray leaving a one inch gap in between. Allow the cookies to bake for 15 minutes and then let them cool before storing or serving. Enjoy!
