A filling, nutritious salad full of flavor and good for you carbs....need I say more? This grain bowl can be thrown together in a pinch and stored in your fridge for the week ahead to make those lunches a no fuss deal or to feed a crowd (when made in bulk). True story: I actually give full credit for this tasty creation to my five year old daughter! I came up with it when I was pregnant with her after waking up one day with an intense craving for every ingredient you see here. I went to the store, bought what I thought sounded yummy, threw it together and fell instantly in love with this dish! It's been one of my go to’s ever since! Try it for yourself and you'll see why!
2 cups of dried quinoa
8 oz of crumbled feta cheese
4 tbsp of extra virgin olive oil (EVOO)
1 cup of organic cherry tomatoes (cut in half)
Cook the quinoa according to the directions and allow it to cool for a few minutes. Then add in the halved cherry tomatoes, feta cheese and olive oil and toss thoroughly. Sprinkle the salad with black pepper and you're ready to dig in! ENJOY
