I know, I know not another bland grilled chicken salad recipe right? Wrong! This fruity, green summer salad is loaded with tons of nutrients and loads of tang! You will fall in love and be left feeling amazing! Trust me, this summer salad is calling your name!
One pound of grilled or sautéed, sliced chicken breast
4 cups of field greens
One medium cucumber
1 cup of diced strawberries
½ cup of diced walnuts
½ cup of feta cheese (optional)
6 medium strawberries
2 tbsp of extra virgin olive oil
2 tbsp of apple cider vinegar
1 pinch or ⅛ tsp of pink Himalayan salt
1 tbsp of lemon juice
1 tsp of honey
Cook your chicken breast however you desire and then slice them thinly. Then, in a food processor or a blender, blend up the ingredients for the strawberry vinaigrette. Once the dressing has reached a smooth, creamy texture the start to assemble the salad. Start by first adding in the greens, then the cucumber, the strawberries, the feta cheese (if desired) and then the walnuts. Lastly, drizzle the dressing evenly over the salad and enjoy!
