Mango Dragon Fruit Salad



Bring the tropics to your kitchen with my mango & dragon fruit salad! This salad is great as an addition to breakfast, as a snack or as a colorful side for a poolside party! It takes five minutes or less to throw together and it as tasty as it is beautiful. Give it a go!


Ingredients:


  • one cup of coconut milk yogurt

  • 2 tbsp of agave

  • 1/4 tsp of salt

  • 1/2 tsp of almond extract

  • 2 cups of mango chunks (frozen and then thawed)

  • 2 cups of dragon fruit chunks (frozen and then thawed)

  • 1 cup of coconut shavings


Directions:


Thaw the mango and dragon fruit chunks either on the countertop for a few hours or overnight in the fridge. Then in a small bowl, combine the yogurt, agave, salt and almond extract and then set it aside. Next, place the mango in medium bowl and then piece by piece, add the dragon fruit chunks on top (as they can bleed and discolor the mango if tossed together). Lastly, top the fruit salad with a dollop of the yogurt dressing and then top the salad with the coconut shavings. ENJOY!
