Mango Salmon Salad



It is no secret that eating more salmon is amazing for our overall health and longevity and we should all be eating more of it. Thankfully, salmon is also incredibly versatile, and therefore it can be made in many different ways, and it can also be paired with an endless number of flavors. For this specific salmon salad recipe, I have created a vibrant, tangy mango dressing that turns just an ordinary salad into an exceptionally gorgeous and nutritious meal you and everyone else at your dinner table will be sure to love!


Ingredients:

  • 1 cup of mango chunks

  • 1/3 cup of white wine vinaigrette

  • 1/3 cup or EVOO

  • 1/4 tsp of ground turmeric

  • 1 6-8 oz salmon fillet

  • 1/8 tsp of salt and pepper

  • 2 cups of organic mixed greens

  • 1/2 cup or diced cucumbers

  • 1/4 cup of sunflower seeds


Directions: Salt and pepper your salmon filet and then air fry or bake it until fully cooked. Then, in a blender or food processor add in the mango, white wine vinaigrette, EVOO and turmeric and then blend thoroughly. Third, dice your cucumber and set it aside. Then, assemble your salad in the following order of mixed greens, diced cucumber, salmon, sunflower seeds and then top it off with a generous drizzle of the mango vinaigrette dressing. Lastly, ENJOY!


Note: This recipe is portioned for one person, but it can be easily multiplied to feed a family or a larger crowd.
