Carrot Cake Muffins

Cinnamon, raisins, carrots and spice makes for the perfect fall treat or breakfast on the go! With all of the colors and flavors of autumn in one muffin along with protein, fiber and vitamins, these muffins are sure to give you both the comfort and energy you crave! Enjoy!
Ingredients:
2 cups of almond flour
1 cup of shredded carrots
1 cup of raisins
2/3 cup of maple syrup
2 eggs
1/3 cup of chopped walnuts
1 tsp baking powder
1/4 tsp of cloves
1/4 tsp of nutmeg
1/4 tsp of cinnamon
Directions:
Preheat your oven to 350 degrees. Then in a medium bowl, toss in the almond flour, raisins, eggs, spices and maple syrup and give a quick stir. Next, slowly add and fold in the shredded carrots. Lastly, line your muffin tin with paper liners and evenly distribute your mixture amongst them before baking your muffins at 350 degrees for 30 minutes. Allow them to cool and then enjoy!
*This recipe makes 12 muffins.
