Quinoa Stuffed Acorn Squash

I often get asked how to eliminate cravings and boost energy and my answer is always the same: just eat real food that tastes as good as it is good for you! It really is that simple! So that being said, I am always on a mission to get in the kitchen and create healthy, whole food recipes for both my family and yours! Introducing, my new Quinoa Stuffed Acorn Squash that is loaded with flavor, fiber and energy boosting nutrients to keep you satiated and satisfied! Make this delicious dinner in minutes and I promise, it will not disappoint!


Ingredients:


-2 acorn squash (halved)

-1 cup of cooked organic tri color quinoa

-4 tbsp of avocado oil

-1 tsp of Ceylon cinnamon

-1/2 tsp of thyme

-1/2 tsp of ground cumin

-1/2 tsp of salt

-1/2 cup of dried cranberries

-1/2 cup of slivered almonds


Directions:


Preheat your oven to 375 degrees. Cut your acorn squash in half, scoop out the center and place them in a glass baking pan in the oven for 20 minutes. Simultaneously, bring your quinoa to a boil before turning it down to low heat and allowing it to cook fully. Next, combine your quinoa with your avocado oil, spices and almonds. Remove the acorn squash from the oven and evenly stuff each one with your quinoa mixture. Serve alone or alongside your favorite protein and enjoy!
