Peppermint Hot Chocolate



Who doesn't love a warm mug of peppermint hot chocolate to sip while watching their favorite Christmas movie all snuggled up in a blanket? Bring on all the sappy Hallmark movies, Elf and the Grinch and I am one happy girl! Christmas is just so magical isn't it? Around the holidays as well as all throughout the year I am all for indulging in moderation. However, I don't like the sugar bomb that often comes with most sweet and festive treats and beverages. So, this year I remade one of my favorite holiday treats with a healthy, refined sugar free spin that tastes so decadent you won't even know what hit you! It can be whipped up in under five minutes and enjoyed by just you or the whole family! Try it out!



Ingredients:


  • 3 tbsp of vegan, sugar free dark chocolate chips (I like Bake Believe morsels )

  • 1 tbsp of cacao powder

  • 1/2 tsp of peppermint extract

  • 1/2 tsp of stevia or monk fruit extract

  • 2 tbsp of water

  • 1 1/2 cups of organic, unsweetened coconut milk


Directions:


In a small sauce pan, add in the morsels, the cacao powder, peppermint extract and stevia or monk fruit and water and then stir consistently until it takes on the thickness of a paste. Then, slowly add in the milk and then stir well. Allow the hot chocolate to simmer for 3-5 minutes and then serve. Enjoy!
