Pineapple & Ginger Chicken Skewers

Grill season is officially here! So, why not add a fun, new recipe to the mix to entertain your guests by the pool or for a simple, weeknight dinner as a family? Introducing a new, personal Live Healthy With Laura favorite: a sweet'n tangy marinated chicken recipe with a tropical twist! Enjoy!


  • 2 cups of pineapple juice

  • 1/2 cup of agave

  • 1 tsp of ground ginger

  • 1/4 tsp of ground black pepper

  • 1/2 tsp of garlic powder

  • 1 lb of cubed chicken

  • Pineapple chunks

  • Purple onion

  • 1 red, yellow and green pepper

  • Wooden Skewers


In a medium sized bowl, combine the pineapple juice, agave, ginger, pepper and garlic and give it a whisk. Then, add in the chicken and transfer the chicken and marinated to a BPA free plastic bag and allow it to sit and marinate for a minimum of at least four hours or overnight. Then, once the chicken is fully marinated, chop the veggies then assemble the veggies, pineapple and chicken in no particular order onto wooden skewers and place on the grill for a total of 8-10 minutes each. Then, serve with your favorite sides and enjoy!
