These delectable muffins are the perfect marriage between comfort and indulgent and they are loaded with good for you, real ingredients! Give them a try and you will be in for a real treat!
* 1 15 oz. can of pumpkin puree
* 2 cups of almond flour
* 1/2 cup of rice flour
* 1/2 cup of maple syrup
* 1/2 cup of coconut sugar
* 2 tsp of ground cinnamon
* 2 tsp of ground nutmeg
* 1/2 cup of coconut oil (melted or liquid)
* 1 tsp of baking powder
* 2 eggs
Pre heat your oven to 375 degrees. Then, in a medium bowl mix the ingredients together beginning with the pumpkin puree. Then, line a muffin tin with paper liners and evenly distribute the muffin mixture amongst 12 muffin tins. Bake the muffins for 30 minutes or until risen. Enjoy!
