Pumpkin Risotto

My new pumpkin risotto truly is healthy comfort food at it's finest! It's simple to make and perfect to pair with any main dish! Enjoy!



Ingredients:


-1 cup of organic Arborio rice 

-2 cups of water 

-1 cup of organic pumpkin purée

-1 tsp of ground nutmeg 

-1 tsp of garlic powder 

-2 tbsp vegan cream cheese (Violife)

-2 tbsp avocado oil 

-1 tsp of salt 

-1/2 oz of fresh organic sage (whole leaves)

-1 tbsp of pumpkin seeds


Directions:


Cook your rice according to it's package directions and then set aside. Then, in a small bowl mix together your pumpkin puree and spices and then proceed to fold in your rice. Serve your risotto in your favorite serving bowl, top with fresh sage leaves and pumpkin seeds for garnish and enjoy!
