Roasted Root Vegetable Medley



Fall is upon us and gorgeous root vegetables are in season waiting to grace your dinner table with the most vibrant spread of color, phytonutrients and herbs that pair perfectly with any protein you choose! This no fuss root veggie medley can be thrown together in minutes and is perfect for any night of the week or even Thanksgiving Day! Give it a try!



Ingredients:


  • 2 cups of purple baby potatoes

  • 1 cup of chopped white onion

  • 2 cups of halved radishes 

  • 1 cup of chopped organic carrots 

  • 1/2 cup of avocado oil

  • 1 tbsp of fresh thyme 

  • 1 tbsp of fresh oregano 

  • 1/2 tsp of salt 

  • 1/2 two of pepper 



Directions:


Pre heat your oven to 400 degrees and then get to chopping up your veggies! Spray your baking sheet, evenly assemble your veggies and sprinkle them with your avocado oil, salt and pepper and herbs. Then, bake your veggies at 400 degrees for 30 minutes and then enjoy!
