Vegan Peppermint Fudge



Peppermint meets chocolate in heavenly bite sized squares that make for the perfect Christmas treat! Now most fudge is loaded with sugar that leaves you feeling jittery and run down but my fudge recipe is refined sugar free and also loaded with healthy fats to stabilize your blood sugar and keep you feeling great and enjoying the holiday season! Try it out! I know you're gonna love it!


Ingredients:


  • 1 cup of coconut oil

  • 1 cup of vegan dark chocolate chips (I use the Bake Believe brand)

  • 1/2 cup of coconut sugar

  • 1 tsp of peppermint extract

  • 1/2 tsp of vanilla extract


Directions:


Add all of the ingredients to a medium sauce pan and then cook it on low. Stir the mixture consistently till it reaches a liquid consistency, then pour the mixture evenly into a silicone ice cube tray and freeze for a minimum of four hours and then allow the fudge to sit on the counter top for five minutes. Then pop them out onto a serving platter. Store them in the fridge and do not pull them out until they are ready to be eaten (as they can melt). Enjoy!
