Watermelon & Mint Sorbet



Dive into summer with this refreshing, fruity and mint flavored dessert! This sweet treat will boost your digestion and leave your skin glowing! Make it, freeze it and enjoy it for days! You and your whole family will love it! It is a great crowd pleaser too! Happy Summer friends!


Ingredients:

  • 4 cups of diced, seedless watermelon

  • 3 tbsp. of fresh, squeezed lemon juice

  • 2 tsp of liquid monk fruit extract

  • 1 oz. or 10 fresh mint leaves finely chopped


Directions:

In a blender or a food processor, combine the lemon juice, monk fruit, mint leaves and the watermelon. Then, puree until you have reached a smoothie-like texture and then pour the mixture into dome shaped silicone molds or into a bowl to freeze overnight or all day (at least 8 hours). Lastly, pop the molds out into a dish or scoop it out of the bowl. Garnish with mint leaves and then enjoy!


Note: This recipe makes four servings.
