Avocado Chocolate Chip Muffins


Chocolate chunks and avocados all in one? Yes, I know. It may sound like a bizarre combination, but I am here to tell you, it's legit! Not only does it taste incredible, but the way it makes you feel? Yeah, that's really where it's at. I hope you will take a few minutes this week to whip up a batch for you and your family so you all can be equipped and ready to go when snack time comes around and energy levels plummet! Honestly if you ask me, healthy never tasted so good!


Ingredients:

  • 2 ripe avocados

  • 1/2 cup of oat milk

  • 2 cups of almond flour

  • 3 tbsp of cacao powder

  • 1 ripe banana

  • 1 tsp baking powder

  • 1 tsp of ground cinnamon

  • 1/2 cup of agave

  • 1/2 cup of Lilly's chocolate chips

  • 3 eggs


Directions:

Pre heat your oven to 350 degrees. Then, grab a blender and pulse the avocado and oat milk together. Then in a small bowl, combine your avocado and oat milk mixture with the remainder of the dry ingredients and stir. Next, line a muffin tin with paper liners and then evenly disperse the mixture into each section. To finish it off, add a few chocolate chips to each muffin as a garnish and bake at 350 for 20 minutes. Allow the muffins to cool and then ENJOY!
