Basil Shrimp Over Jasmine Rice


Sautéed shrimp with basil and a little kick of spice over jasmine rice makes for the perfect weeknight meal for you and the whole family! Fill up on lean protein, antioxidant rich spices and gluten free grains to satisfy your hunger cravings and energize your body! Make this recipe ahead or on the spot and be ready to eat in fifteen minutes or less! Enjoy!


Ingredients:

  • 2 cups of shrimp

  • 1 oz of organic basil leaves

  • 6 tbsp of avocado oil

  • 1 tsp of lemon juice

  • 1/4 tsp of salt

  • 1/4 tsp of garlic powder

  • 1/8 tsp of paprika

  • 1 cup of cooked jasmine rice

Directions:


Thaw your shrimp and set it to the side. Then, in a food processor, blend your basil, salt, garlic powder, paprika, lemon juice and avocado oil together. Pour the pesto mixture evenly over the shrimp in the sauce pan and saute for ten minutes on medium/ high heat. In the meantime, steam your organic jasmine rice or cook it on the stovetop and then portion out the rice into two bowls and then evenly top it with shrimp. Last but not least, ENJOY!
