Blueberry Pie With A Vanilla Wafer Crust



Sweet summertime is nearly here along with backyard parties and picnics galore! This summer for me is all about the delicious freshly picked berries and my new blueberry pie! It is super easy to throw together in a pinch and a serious crowd pleaser! Give it a go!


Ingredients:


Crust: 

  • 1 box of kinnikinnick vanilla wafers (crushed)

  • 1 stick of grass-fed butter 

  • 1/3 cup of agave 

  • 1 tsp of almond extract 


Filling: 

  • 3 cups of organic blueberries 

  • 2 tbsp of lemon juice 

  • 1/2 cup of maple syrup 

  • 1/3 cup of arrowroot flour 


Directions:


Preheat your oven to 350 degrees. Then, crush your vanilla wafers and toss them in a bowl and add in the butter, almond extract and agave and give it a stir. Then, grease your pie dish and add in your crust and then work on carefully molding it to the bottom and sides of your dish before baking it for 20 minutes. Then simultaneously as the crust is baking, add the blueberries, lemon juice, maple syrup and arrowroot flour to a sauce pan and allow it to cook at medium to high heat. Stir consistently until you reach a jam like texture and then fill your pie crust with your blueberry filling. Allow your pie to chill in your refrigerator for at least one hour and then enjoy!
