Cozy, hearty stew in the crock pot on a chilly night is my kind of comforting dinner! This Brunswick stew is loaded with hearty potatoes, corn, lima beans, tomatoes and chicken and it is the perfect one pot, balanced meal for the whole family! It offers protein, fiber, vitamins and minerals and lots and lots of flavor! Try it out!
2 cooked and shredded chicken breasts
2 cans of diced tomatoes
2 cups of diced golden Idaho potatoes
1 cup of frozen Lima beans
1 cup of corn kernels
3 cups of chicken broth or stock
1 1/2 tsp of pink Himalayan salt
1 tsp of black pepper
1/4 tsp of stevia extract
Boil and dice the chicken. Then, add in the diced chicken breasts to a medium to large sized crock pot, following the vegetables. Then pour the chicken broth over the vegetables, add salt and pepper, put the lid on and the crock pot and then set it to low for eight hours. Enjoy!
