Coconut, peanut butter and agave...the perfect trio for the perfect delicious and nutritious no-bake protein bars! These bars offer the perfect creamy fudgy texture with a hint of coconut crunch while also offering loads of plant based protein, healthy fats and fiber! They make for the perfect treat or post workout snack! You have to give them a try!
2 1/2 cups of almond flour
1 cup of unsweetened shredded coconut
1/4 cup of unsweetened shredded coconut (for garnish)
1 cup of peanut butter
1/2 cup of agave
1/2 cup of coconut oil (melted)
1/2 tsp of pink Himalayan salt
1 tsp of cinnamon
In a medium bowl, add in the almond flour, melted peanut butter and melted coconut oil and then stir thoroughly. Then, fold in the other ingredients one by one. Then, line an 8x8 Pyrex dish and then slowly pour in the batter and then flatten the batter with a spatula. Then, place the dish in the fridge allow to harden for 8 hours or overnight. Cut the bars into eight, even rectangles and then individually wrap them in parchment paper or place them in Ziploc bags. Then...enjoy!
