Coffee Cake Muffins



Just the smell of fresh brewed coffee makes me happy so naturally, I felt inclined to create these muffins for a delicious pick me up snack! With their crumbly finish, they are sure to be a crowd pleaser and sure to make your kitchen smell like your favorite coffee shop! Enjoy!



Crumble topping:


  • 1 cup of oat flour 

  • 4 tbsp of maple syrup 

  • 1 tsp of cinnamon


Muffins:


  • 2 cups of almond flour

  • 1 cup of strong black coffee

  • 2 eggs

  • 1/2 cup of coconut sugar 

  • 1 cup of organic maple syrup

  • 1/2 tbsp of baking powder 


Directions:


Pre heat your oven to 350 degrees. Then, toss together your crumble topping and place it in the fridge to cool while you whip up your muffin batter. Distribute your batter to a greased muffin tin and then evenly distribute the crumble topping. Bake the muffins at 350 degrees for 30 minutes and then enjoy!
