Dark Chocolate Hazelnut No Bake Cookies

Is there anything better than an indulgent Christmas cookie that’s healthy enough for you to eat for breakfast? I think not! If healthy treats are your thing then my “Dark Chocolate No Bake Cookies” are for you!

These cookies have been on repeat in my house for a few years now. With endless amounts of sugar at arms reach constantly throughout the holiday season I try to always keep healthy alternatives available for my family to indulge in!

In addition to being rich and decadent, these cookies are loaded with fiber, healthy fats and protein and they are my gift to you this holiday season!

Ingredients:

2 cups of quick oats

11 oz. (one jar) of Nutilight

3/4 cups of natural peanut butter

1/2 cup of coconut oil

1/2 cup of cocao powder (NOT cocoa powder)

2 tsp. of liquid monk fruit or stevia


Directions:

In a medium sized sauce pan add the Nutilight, coconut oil and peanut butter and let it simmer on low (stir continuously). Then, once the ingredients have fully melted and liquified add in the oats, cocao powder and monk fruit or stevia extract and stir well. Lastly, distribute the mixture evenly in a muffin tin lined with paper baking cups and chill in the fridge for two hours. Then…ENJOY!

(makes about 10 large cookies)
