Goat Cheese & Kale Frittatas


I did it again you guys. I came up with yet another Starbucks copycat recipe and I must say that boy, did I nail this one! These Live Healthy With Laura created and approved egg bites really win the prize and make for the perfect breakfast on the go! They offer loads of protein, veggies and tangy cheesy flavor and they also happen to be kid approved! Try them out!



Ingredients:

  • 12 eggs

  • 1 cup of frozen, chopped kale

  • 1 cup of diced sundried tomatoes (drained and without herbs)

  • 8 oz. of goat cheese crumbles

  • 1 tsp of Italian seasoning

  • 1/2 tsp of salt and pepper

  • 1 tbsp of avocado oil

Directions:


Pre heat your oven till 350 degrees. Then, in a medium bowl mix together the eggs, kale, tomatoes and goat cheese followed by the seasoning and oil. Lastly, spray your muffin tin and then evenly disperse the egg mixture and then allow the frittatas to bake for 30 minutes. ENJOY!
