Grilled Asparagus with A Lemon Curry Aioli


Did you know that asparagus are one of the top cancer fighting foods on the planet? They are loaded with antioxidants, and they also have the power to lower your blood pressure, give your digestive tract a boost and keep your skin from aging! Whoa! Now, there are a million and one ways to eat them but today, I am sharing with you my favorite way to eat them and that is with a tangy, lemony twist! This lemon curry aioli dressing not only offers loads of flavor, but it also is packed full of antioxidants and anti-inflammatory properties! Serve it before a meal as an appetizer, as a snack or with a meal. Enjoy!


Ingredients:

  • 12 oz of fresh asparagus

  • 2 tbsp of avocado oil

  • 1/2 tsp of salt

  • 1/2 cup of organic Mayo

  • 1/4 tsp of salt

  • 1/8 tsp of paprika

  • 1 tsp of curry powder

  • 1/4 tsp of garlic powder

  • 1 tbsp of lemon juice

Directions:


In a small bowl, mix together the mayo, the salt, the paprika, curry, garlic and lemon juice and set it aside. They, grill your asparagus to your liking and allow them to cool for five to ten minutes. Lastly, plate them alongside the aioli and enjoy!
