Hawaiian Pineapple Breakfast Muffins

When we were in Hawaii we passed by a gorgeous pineapple plantation and each morning we were served fresh, local pineapple! So yet again, I am sharing another (and one final) recipe inspired by our Hawaiin adventure before we embrace the fall! Make these pineapple muffins for a quick and healthy breakfast or snack on the go and enjoy a tropical paradise bite by bite! Enjoy!
Ingredients:
A blender
1 cup of fresh, chopped pineapple
1/2 cup of additional finely chopped pineapple for garnish (set aside)
2 eggs
2 cups of almond flour
1/3 cup of arrowroot flour
1/2 tbsp of baking powder
1/3 cup of agave
1 tsp of vanilla extract
2 tbsp of avocado oil
Directions:
Pre heat your oven to 350 degrees. Next, grab your blender and simply toss in the above ingredients in no particular order (eggs and all!) Lastly, evenly pour your mixture amongst your muffin tin and then bake in the oven for 30 minutes. Allow them to cool and then enjoy!
