Just Peachy Sorbet



Doesn't it seem that this summer is just getting hotter and hotter with each day that passes? Phew! Now, I don't know about you but something about this heat wave has me craving allll the fruity, frozen treats! Give me all of the popsicles, gelato and Italian ice and I am one happy girl...until I have a sugar crash an hour later! Who wants to indulge in a dessert that leaves them down in the dumps and feeling like garbage afterwards? Not me! That being said (and for anyone who is new to Live Healthy With Laura), I will tell you that I never deny myself a craving. Instead, I follow my taste buds and come up with treats that cater to both my sweet tooth and my body's needs. Introducing a brand new summer recipe of mine...my "Just Peachy Sorbet"! ! This frozen treat not only offers loads of vitamin C and antioxidants but also fiber for a healthier gut! It only takes minutes to prepare and a few hours to freeze! Give it a try before these warm summer days are gone!


Ingredients:

  • 16 oz. of frozen, sliced peaches (thawed)

  • 1/2 cup of agave

  • 1 tsp of vanilla extract

  • 1 tbsp of lemon juice


Directions:


In a blender, food processor or Vitamix combine all of the above ingredients and puree until you have reached a smoothie like consistency. Then pour the mixture into half dome silicone molds for the perfect scoop or pour into a Pyrex dish of your choosing. Freeze for at least 6 hours or over night and then ENJOY!
