Lemon Poppy Seed Muffins



These lemon poppy seed muffins are the perfect, refreshing treat that the whole family will love! They are the perfect marriage between sweet and tangy and they smell like heaven on earth when they are baking in the oven! Eat them for breakfast, as a snack or as a dessert. Either way you can't go wrong!


Ingredients:

  • 2 cups of almond flour

  • 3/4 cup of agave

  • 2/3 cup of fresh squeezed lemon juice

  • 1/2 cup of coconut oil (melted)

  • 1/2 tsp of baking soda

  • 1 tbsp of poppyseeds

  • 3 eggs


Directions:


Pre heat the oven to 350 degrees. Then, in a medium bowl add in the almond flour, baking soda and poppy seeds and give it a toss. Then, add in all of the liquid ingredients including the agave, lemon juice, melted coconut oil and eggs and stir thoroughly. Lastly, distribute the mixture evenly into a muffin pan lined with paper baking cups. Bake the muffins for 30 minutes, all them to cool and ENJOY!
