Salmon with a maple glaze and brussels served over brown rice? Heck yes! This new dinner recipe I must say you guys, is a favorite of mine and I am so excited to finally be sharing it with you all! Not only are the flavors and textures perfection (if I may say so myself), but the way you will feel after this delicious meal is equally as amazing! Try it out on even the busiest of weekdays and enjoy eating like royalty in just twenty minutes or less!

Ingredients:

  • 2 salmon fillets

  • 2 cups of Brussels sprouts

  • 1/2 cup of maple syrup

  • 1/3 cup of coconut aminos

  • 1 tbsp of lemon juice

  • 1/2 tsp of garlic powder

  • 1/2 tsp of paprika

  • 2 tbsp of Avocado oil (for pan)

  • 1 cup of brown rice

Directions:

In a small bowl, combine together the maple syrup, coconut aminos, lemon juice, garlic powder and papika and give it a quick stir. Then, place your skillet on the stove and turn up the heat to medium/high and add the avocado oil to the bottom of the pan. Then, add in the salmon and brussels and evenly coat them with the maple glaze. Place a lid on top and allow it to simmer for about twenty minutes. In the meantime, steam or boil your brown rice and set it to the side. Once the salmon and brussels have finished cooking serve them over brown rice and ENJOY!

*This recipe makes two servings.
