Mediterranean Summer Salad



Summer is finally here and with that naturally comes lots of poolside gatherings and potlucks with my favorite people! Now of course, with sunny gatherings comes lots of food so this summer I have created an all-new pasta recipe with a Mediterranean twist to share! It's simple yet nutritious and packed with loads of healthy fats, complex carbohydrates and antioxidants! Give it a go!



Ingredients:

  • 12 oz box of gluten free rigatoni (my favorite brand as of late is by Barilla)

  • 1/2 cup of purple onion

  • 1/2 diced cucumber

  • 1/2 cup of sliced olives

  • 2 tbsp of lemon juice

  • 3 tbsp of white wine vinegar

  • 2 tbsp of EVOO

  • 2 tbsp of honey

  • 1 tsp of dried basil

  • 1/2 tsp of garlic powder

  • 1/2 cup of feta cheese as a topping


Directions:


Prepare the pasta according to the directions on the box. Then, in a small bowl whisk together the lemon juice, vinegar, EVOO, honey, basil and garlic powder and set it aside. Then, dice the cucumber and onion and toss it with the pasta and the dressing. Lastly, top the salad with feta cheese and then voila! You're all finished! ENJOY!
