Peanut Butter & Blueberry No Bake Breakfast Bars


If you are looking for an easy, gluten free breakfast bar that you can prep on the weekends and store for the week ahead (and if you are already a fan of my strawberry no bake bars) then look no further because these bars have you covered! This recipe is loaded with plant-based protein and fiber plus a serving of fruit, and they take only ten minutes to prepare! Not to mention, these bars are kid friendly too! So what are you waiting for? Add these ingredients to your cart and try them out!


Ingredients:

  • 2 cups of oats

  • 1/2 cup of organic maple syrup

  • 1 cup of organic blueberries

  • 1/2 tsp of almond extract

  • 1/2 tsp of Redmond real salt

  • 1/2 cup of slivered almonds

  • 1 tsp of cinnamon

  • 2 tbsp of avocado oil

  • 1 cup of organic peanut butter

Directions:


In a medium bowl add in the dry ingredients aside from the blueberries and give them a toss. Then, in a small cereal bowl or coffee mug, microwave the peanut butter for sixty seconds and then add it in. Lastly, add the blueberries and mix well (but be extra careful to not smash the berries). Then line a small, square Pyrex dish or pan with parchment paper, add in the mixture and then flatten it out. Place it in the refrigerator for at least two hours and then remove them and place them on a cutting board by carefully lifting the corners of the parchment paper. Then, cut them into 8 bars and individually wrap them and place them back in refrigerator for whenever you get the hankering for one. ENJOY!
