Pumpkin Pie Over Night Oats

Oatmeal just got a makeover you guys, and this time it has a pumpkin pie twist! Introducing my pumpkin pie overnight oats that will fill your belly with all of the comfort of fall and all of the energy your body needs to go about your day! This easy, make a head recipe can be made in under ten minutes and can set you up for success for the entire week ahead! Give it a go!



Ingredients:


  • 1 cup of organic quick oats

  • 1 cup of oat milk

  • 3 tbsp of pumpkin puree

  • 2 tbsp of maple syrup

  • 1/2 tbsp of pumpkin pie spice

  • 1/8 tsp of nutmeg

  • 1/2 tsp of vanilla extract


Directions:


In a medium size bowl, combine the oats, oat milk, maple syrup and pumpkin puree and give it a stir. Then, mix in the vanilla extract as well as the pumpkin pie spice and nutmeg. Lastly, pour the oat mixture into a 16 oz mason jar and secure it with a lid. Allow it to sit in the fridge all night and then wake up, grab your mason jar out of the fridge and ENJOY!


NOTE: I recommend quadrupling this recipe and making a batch for the week ahead!
