Are you low on energy and in need of a quick, healthy snack on the go with a cozy, Fall twist? Well then, these Pumpkin Seed & Cranberry Energy Bites are for you! They take only minutes to make and take zero time to bake! Simply combine the ingredients in a bowl, roll them in balls and stick them in the fridge to harden and to enjoy throughout the week! Not only will these little bites excite your taste buds, but they will also fill your body with tons of plant-based protein, fiber and antioxidants! Give them a try!



Ingredients:

  • 2 cups of organic quick oats

  • 1/2 cup of dried cranberries

  • 1/4 cup of pumpkin seeds (pepitas)

  • 1/2 cup of organic maple syrup

  • 1/2 cup of almond butter (melted)

  • 1/2 tsp of ground cinnamon

  • 1/4 tsp of vanilla extract

  • 1/4 tsp of almond extract

  • 1/4 tsp of pink Himalayan salt


Directions:


In a medium bowl, add in the dry ingredients and then give them a quick toss. Then, melt your almond butter for one minute in the microwave and then mix it into the batter slowly and thoroughly. Lastly, grab a baking sheet and line it with wax paper. Roll the balls between your hands into one-inch balls and place them in the fridge to harden for a minimum of two hours. Then, ENJOY!
