Salted Caramel Cookies



Who doesn't love a little something salty mixed with a little something sweet? These fluffy, gluten free oat cookies are delicious on their own but paired with gooey caramel and some chunky salt flakes and you have perfection! Indulge in this cozy fall treat with those you love this week and enjoy feeling great in the process!


Caramel Sauce

  • 1 stick Kerry gold butter 

  • 1/2 cup of coconut sugar 

  • 1/3 cup of Lilly's white chocolate chips 


Cookies

  • 2 cups of oat flour 

  • 1/2 cup of raw maple syrup 

  • 2 eggs 

  • 1 tsp of vanilla extract

  • 1/2 tbsp of baking powder (aluminum free)

  • 1 tbsp of course sea salt 


Preheat the oven to 350 degrees and then thoroughly mix your cookie ingredients together in a bowl. Then allow the dough to chill in the fridge for 20 minutes. Next, spray your sheet pan and then evenely assemble your cookie dough and then place them in the oven to bake for 15 minutes. Allow them to cool while simultaneously assembling the caramel sauce on the stove top and cooking it at medium heat while stirring periodically. Lastly, top each cookie with a drizzle of caramel sauce and a sprinkle of coarse sea salt and then enjoy!
