Strawberry Sponge Cake

Berry picking season is here so needless to say, it was time for a new sweet treat to hit the blog! These new strawberry sponge cakes are the perfect addition to a cup of coffee, a garden party or a poolside gathering with friends! Whip them up in minutes and enjoy!
Ingredients:
1 cup of diced strawberries
1 cup of arrowroot flour
1 cup of almond flour
1 tsp of baking powder
1 stick of grass fed butter (melted)
1 cup of pure maple syrup
2 eggs
1/4 tsp of salt
2 tbsp of avocado oil
1 tsp of vanilla extract
2 tsp of almond extract
A 12 part square silicone mold (optional but recommended)
Directions:
Preheat your oven to 350 degrees and then spray your silicone mold and set it aside. Get to chopping up your strawberries and set them aside. Then in a medium bowl, toss in the rest of the ingredients in no particular order. Gently fold in your strawberries and then give your batter a thorough mix and then evenly distribute it amongst your silicone mold. Bake them at 350 degrees for 25 minutes and then allow them to cool. Lastly, enjoy!
