Summer Corn Salad



In our family, corn on the cob is just a given these day when when we cookout. But this summer, I decided to change it up a bit! Introducing my Summer Corn Salad that offers you a little sweet with a little tang plus a little creamy, mildly-spicy finish! I whip this up in ten minutes or less and top it with a little organic turkey bacon and voila! It's seriously the bomb you guys! You have to try it!



Ingredients:

  • 3 cans of sweet corn kernels

  • 1 cup of halved cherry tomatoes

  • 1/2 cup of chopped green onions

  • 1/2 cup of organic Mayo

  • 1/2 tsp of garlic powder

  • 1/2 tsp of paprika

  • 1/2 tsp of salt

  • 1 tsp of agave

  • 1 cup of chopped Turkey bacon


Directions:


In a medium bowl, toss together the corn, halved cherry tomatoes and green onions. Then in a small bowl mix together the mayo, garlic powder, paprika, salt and agave and mix well. Then, mix the dressing together with the salad and top it with the turkey bacon. Chill it in the fridge for an hour and then serve. ENJOY!
