Summer Veggie Burgers

Sadly, summer is coming to an end. But that doesn't mean you still don't have some time left for some delicious dinners outside in that warm summer breeze! Now, is the perfect time to make a date with your grill and whip up my simple veggie burgers that you and the whole family will love! Check them out!


Ingredients:

  • 1 15 oz can of organic black beans

  • 1 15 oz can of Amy's refried beans

  • 1 15 oz of organic corn kernels

  • 1/2 cup of finely diced red bell pepper

  • 1 cup of GF breadcrumbs

  • 1/2 cup of tri color quinoa (measured dry)

  • 2 eggs

  • 1/2 tsp of onion powder

  • 1/2 tsp of garlic powder

  • 1/4 tsp of salt

  • 1/4 tsp of black pepper


Directions:


First, cook the quinoa according to the directions. Then, dice up the red bell pepper and set it aside. Next, in a medium bowl, add in the black beans, refried beans, corn kernels, breadcrumbs and eggs and then mix thoroughly while slowly adding each seasoning. Lastly, pat the burgers out into 4-5 inch patties and then either pan fry the burgers in a couple tablespoons of avocado oil or cook them on the grill to your liking. Serve them with the desired veggies on a gluten free bun or bunless on a bed of greens. ENJOY!
