Turkey Stuffed Sweet Potatoes



Sometimes it is fun to change things up isn't it? I mean, who says we always have to be traditional? Now listen, I enjoy a big turkey as much as anyone but if for some reason this year you find yourself not in the mood to do the whole Thanksgiving spread than give these babies a try! Or, feel free to just whip up this simple and delicious recipe for an easy weeknight dinner that the whole family will love!


Ingredients:

  • 1 lb. of organic ground turkey

  • 1/2 of a diced red bell pepper

  • 1/3 cup of a diced yellow onion

  • 1 tbsp. of EVOO

  • 1 tbsp. of Italian seasoning

  • 1/2 tsp. of pink Himalayan salt

  • 1/2 tsp. of garlic powder

  • 1/2 cup of organic parmesan cheese or vegan "parmesan cheese" (optional)

  • 4 steamable sweet potatoes


Directions:


In a medium skillet, sauté together the turkey, peppers, onions, cheese and seasonings on medium to high heat for a total of ten minutes. Then, steam the sweet potatoes for one minute each, cut them in half and then scoop out the middle. Evenly disperse the turkey mixture amongst four halved sweet potatoes and then ENJOY!
