Veggie Ramen "Noodles"

Who doesn't love ramen noodles right? I mean aren't they just so satisfying and filling? However, let's be real. It's no secret that traditional ramen noodles we all grew up with, are a simple carbohydrate and sodium load. So, how do we still embrace our childhood and enjoy ramen without it being detrimental to our health and waistline? If you have been wondering this, than wonder no longer! I've got you covered my friend! Miracle Noodle and I collaborated this month to bring to you my Veggie Ramen Noodles recipe using their out of this world amazing "miracle" pasta made from the Japanese Konjac root! These little noodles are truly unique in the way that they soak up any flavor you pair them with. I have used them in loads of traditional Italian recipes but I must say, this ramen may be my favorite! These konjac noodles offer you loads of fiber to keep you full and your blood sugar stable for hours and the entire bag is only 10 calories! Say what!? Calories aren't really something I focus on but even I can say that 10 calories for a bowl of pasta is quite impressive! Ingredients:

  • 1 32 oz. carton of organic veggie broth

  • 1/2 cup of shredded carrots

  • 1/2 cup of sliced white mushrooms

  • 1/2 cup of chopped green onion

  • 1/4 cup of diced red bell peppers

  • 1/4 cup of sprouts

  • 1 package of Miracle Noodles "spaghetti style"

  • A few dashes of black pepper


Directions:


In a medium sized pot, add in the veggies and sauté them for 5 minutes before adding the broth and black pepper. Then, drain the noodles and add them to the pot and stir on medium/high heat for another 5 minutes. Then, ENJOY!
